Lamb Rack Roast with Rosemary

  • Ingredients
  • 50 gram (2 ounce) fresh breadcrumbs
  • 2 teaspoon Lamb Seasoning
  • 2 teaspoon lemon juice
  • 2 tablespoons olive oil
  • 450 gram (1 pound) rack of lamb, bone removed and trimmed of excess fat
  • Sauce:
  • 1 tablespoons cornflour
  • 2 tablespoons red wine
  • 1 teaspoon Lamb Seasoning
  • 300 millilitre (½ pint) lamb stock
  1. Instructions
  2. Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
  3. Mix together the breadcrumbs, Perfect Shake Lamb Herb & Spice Blend, lemon juice and oil and press onto the fat side of the lamb.
  4. Place in a small roasting tin and bake for 20-30 minutes for a rare to medium appearance, or 30-35 minutes for well done.
  5. Meanwhile, blend the cornflour with the remaining ingredients in a small saucepan. Bring to the boil, stirring until thickened. Serve with the lamb.
